"Sausage and Cheddar Breakfast Pie"

The Sausage and Cheddar Breakfast Pie is a very versatile dish. If you have some left over grilled vegetables or other items you could certainly build this breakfast pie into your own creation. This recipes is with Sausage and Cheddar Cheese. At Cranberry Manor Bed and Breakfast we serve this up with a side of our Baked Tomatoes. Please note that the pictures don’t do the flavor justice. The guest loved it.
Preheat Oven: 375 Degrees
Prep Time: 15 Minutes
Serves: 6
Cook Time: About 40 Minutes or Until Golden Brown
Ingredients:
1 1/2 Cups of Cooked Ground Sausage
1 Cup of Shredded Cheddar
1/4 cup or Sliced Green Onions
3/4 Cup of Jiffy Mix Baking Mix or Bisquick Mix
1 1/2 Cup of Milk
1/4 Teaspoon of Salt
1/8 Teaspoon of Black Pepper
3 Eggs
Cooking Spray or Crisco Vegetable Shortening
Directions:
Preheat oven to 375 degrees.
Grease a 9 inch pie plate with Cooking Spray or Crisco Vegetable Shortening.
Sprinkle the 1 Cup of Cheddar Cheese into the bottom of the pie plate. Next sprinkle in the green onions and then the cooked sausage.
In a small mixing bowl, mix together the 3 eggs, 3/4 Cup of baking mix, 1 1/2 Cups of milk, salt and pepper. Don’t worry there will be small lumps in the batter.
Pour batter into the pie plate over the cooked sausage.
Bake for about 40 minutes or until the pie is a golden brown and the center is cooked.
Let it cool for 5 – 10 minutes and then slice and serve.
