Featured Inn - Cranberry Manor Bed and Breakfast
Cranberry Manor Bed and Breakfast is located in the Heart of the Pocono Mountains. The bed and breakfast is a former 1880’s summer boarding home situated on 14 acres at the edge of the Tannersville PA Cranberry Bog. The inn was fully renovated into a bed and breakfast with “5” guest rooms”.
The inn has +130 years of serving guests breakfast. Today, breakfast is served in the dining room in an elegant setting of crystal and china and candlelight accompanied by delicious creations by the innkeeper, Sharon Anderson.
The signature dish of Cranberry Manor bed and breakfast is the “Peach Upside Down Pancake”. It was featured on 16 WNEP Home and Backyard in 2017 and again aired in 2019.
The innkeeper has also shared several more recipes below.
Seriously? Who would have thought to bake a grapefruit is the usual responses of the guests at Cranberry Manor Bed and Breakfast. This baked grapefruit dish is an elegant Fall and Winter fruit dish. The grapefruit is sectioned, and topped off with a mixture of pumpkin pie spice, brown sugar and orange juice and then baked. As it bakes the grapefruit sections begin to rise up out of each section. Guest spoon out the delightful pieces of warm fruit with spices. The innkeeper has caught the guest going as far as squeezing out by hand the very last drops of the flavorful grapefruit juices into the bowl to finish it off.
Strawberry Stuffed French Toast
The Strawberry Stuffed French toast is sure to please. Stuffed with Strawberry Jam and a slightly sweet cream cheese filling. You can do your own variations.
Very elegant yet simple dish as the peach is halved, topped off with cinnamon sugar and then baked till tender. The peach shown was from Lancaster, PA and was almost the size of a softball. The peach was very flavorful and ripe which made this dish even more amazing.
Brie Cheese Casserole
The Sausage and Brie Cheese Casserole is an overnight casserole. This egg casserole has sausage, bread, brie cheese, and parmesan cheese. The surprise addition of a topping added right before baking is what makes this casserole such a delight as it bakes and browns. Serve with the Baked Tomatoes.
Baked tomatoes are a wonderful side item for the egg casseroles that we serve. Ripe sliced tomatoes seasoned and topped with parmesan cheese and a little bit of olive oil.
Crepes with Triple Berry Sauce
Light and yet flavorful crepes can vary from sweet to savory to stuffed or just topped off. The combinations are limitless. We top ours with a triple berry sauce and whipped cream.
Sausage Gravy and Biscuits
Our sausage gravy and biscuits have so many layers of flavors. We start with our 7up biscuit recipe with chedder cheese, garlic powder and green onions, and then top with the sausage gravy , scrambled eggs and more cheddar cheese. The biscuit almost starts to melt under the sausage gravy as the flavors mingle together.
Can you believe these biscuits are made with 7UP and sour cream? Light and fluffy and we serve these with our sausage gravy.
Eggs Dijon Casserole
A light and fluffy egg casserole with light cream with dijon mustard is a great option for vegetarians. We serve with a side of our baked tomatoes as shown.
Bananas with Homemade Caramel Sauce
You can always tell when past guests are staying. They see the innkeeper coming out of the kitchen to serve the bananas with homemade caramel sauce. The past guests responses are a delightful attempt to try and be restrained while saying “YES” in excitement. A big smile spreads across their faces. Some even start to wiggle in the seats. They then lean over and whisper to the new guests why they are behaving they way they are. Its really cute. They would lick the bowl if they could do so.
