"Baked Grapefruit"

Recipe from "Cranberry Manor Bed and Breakfast"

A baked Grapefruit is a warm delicious breakfast fruit side dish.  It looks elegant yet is very easy to make.  The innkeeper serves these in the Fall and Winter time.  

Preheat Oven:  350

Prep Time:  15 Minutes

Serves: 2 (1 grapefruit)

Cook Time: 30 Minutes

Ingredients:

1 Ruby Red Grapefruit

3  Tablespoons Brown Sugar

2 Teaspoons or Orange Juice or even Triple Sec (your choice)

1/4 Teaspoon Pumpkin Pie Spice

Directions:

Preheat oven to 350 degrees.

In a small mixing bowl, mix brown sugar, Triple Sec, and pumpkin pie spice.

Cut grapefruit in half.  Make sure grapefruits sits level if not you can cut a small sliver of skin off bottom of grapefruit to make it sit evenly.  Don’t cut too deep or the juice will bake out of the bottom and you will have a dry grapefruit. 

Section grapefruit removing any visible seeds.  Place grapefruits on a baking “pan” that has edges so the juice doesn’t spill all over the oven.   Top sectioned grapefruit with the brown sugar mixture.  If the grapefruit is sitting level the brown sugar mixture shouldn’t run off.  Sometimes I lean them next to another in the baking pan to make them sit more level so the mixture doesn’t run off.

Bake grapefruits for about 30 minutes.  When grapefruit sections puff up as shown in the above photo their done.
